Let's Eat! | Meal Planning April 27th 2023

Hey girl Hey!!! The other day on my IG stories, I asked if y'all wanted to start seeing menu plans - because you know I love to cook, and Im also trying to hold myself accountable with cooking at home - and the vote was overwhelmingly for YES!

(I'll come back at the end of the week and add the photos of each recipe!)


So here we go, our first week!


I generally go grocery shopping on Thursday's since its my first "day off" of the week - that's why you will see that I am not starting on a Monday. However, on Monday's I might make a stop on my way home from work because I also really like my veggies and things to stay fresh, so I usually only plan 4-5 days at a time.


MENU -

  • Thursday April 27th - Pan seared pork chops, Mac n cheese, broccoli and cauliflower

  • Friday April 28th- Quesadilla Explosion Salad (chili's copycat recipe)

  • Saturday April 29th- Family dinner at my moms. (I'll explain more after the menu) Baked chicken

  • Sunday April 30th - Baked Chicken Pasta

  • Monday May 1st- Teriyaki chicken with fried rice and broccoli

I also like to plan out breakfasts and lunches so I have something to grab, I just don't assign days to them. Here is what I have planned this week:


Breakfast options:

  • Migas tacos with bacon

  • yogurt and granola

  • bagels with lox

  • cottage cheese eggs with toast

  • chicken sausage

  • fruit


Lunch options:

  • Pasta salad

  • Arby's at home mini sliders

  • Salad


Monday will also be our movie night so we will eat a little earlier, then have popcorn and candy and watch a movie from our 100 best movies poster.


On to family dinner, my side of the family used to get together once a week to have a reconnect and have dinner together. We all used to live in the same city and it was easy to do. However, my sister and her husband are moving to San Antonio since she's in nursing school to be closer to her work. My daughter and her fiancé moved up to Georgetown to be closer to their jobs as well. So we are all spread apart - so once a month is what we do now and it makes it super special when we all get to come back together! Family is extremely important to me, so you will see we usually go all out for these dinners!


We rotate weeks on who makes the main course - this week is mine and I'm making honey lemon pepper baked chicken and cornbread. My mom is assigned to do the side dishes, and my sister will make dessert! I'll share it all after on another blog post so you can gather ideas for your own families get togethers!


Recipe for the baked chicken pasta is fairly simple! I like to sauté whatever veggies I have on hand, bell peppers, zucchini, onions, you name it, and season to your liking. Net boil up whatever pasta you have, and when its almost finished, drain and add in your veggies, a drained can of rotel, and a small can of cream of mushroom soup. Put it in a casserole dish and top with cheese of your choice then pop it in a 375 degree oven for 15-20 minutes! Always a big hit!
